Opened in 2014, the Restaurant Le VinTage is now headed by Jérôme Lathuilière, who creates modern cuisine that places great emphasis on regional produce and follows the rhythm of the seasons.
Burgundy's traditions are never out of sight, yet the chef likes to interpret them in a special way, creating dishes that appeal to modern tastebuds while also honouring French gastronomical traditions.
“I reinterpret culinary classics while always seeking to surprise the tastebuds.”
Jérôme Lathuilière joined Vosne-Romanée in April 2018. Since then, he and his staff have revisited some of the great classics of Burgundy's cuisine, while adding a playful and modern touch. The result? A combination of colourful, original flavours that uses fresh country produce and perfectly complements the fine wines of Burgundy.
Before joining Le Richebourg, the chef, originally from Roanne in the Loire, got his start in restaurants in the Rhône, notably at La Rotonde in La Tour-de-Salvagny and at the restaurants in Le Lyon Vert Casino. For a number of seasons, he worked with Hervé Briffaud (of Le Giraglia in Port-Grimaud) in Méribel and Tignes. He joined the Restaurant Pierre et Jean in Chagny, an annex of the famous Maison Lameloise, working alongside Eric Pras, winner of the prestigious “Meilleur Ouvrier de France” award.
